Very Ripe Bananas: Selecting the ripest bananas will yield maximum flavor. While very ripe bananas produce the best results, you must be careful to not confuse old over-ripe bananas with the kind of ripe bananas you need for this banana bread. There is a distinct difference in taste and smell.
Flour: The flour should be sifted and mixed well with the cinnamon and nutmeg. This will help for a consistent distribution and taste of spices. The sifting will also minimize lumps.
Baking Powder and Baking Soda: Fresh is best. Ensure that the baking powder and baking soda are not expired. If they are, the banana bread will not rise as it should.

How To Make The Best Delicious Banana Bread
Mash the bananas in a large mixing bowl with the sugar and salt, and allow to sit for five minutes. Grease two 8″ X 4″ or one 9’ x 5’ loaf pan, then dust lightly with flour.
Set your oven to 300° Fahrenheit or about 150° Celsius. (Because my oven heats up pretty quickly, I usually set it after prepping my ingredients. If your oven takes a longer time to heat up, you may want to preheat at the very start).
Melt the butter and set it aside. Sift and combine the flour, baking powder, baking soda, nutmeg, and cinnamon. In a small bowl, beat the eggs and set aside. Mix in the oil, and melted butter, with the banana mixture and mix well.
Add in the beaten eggs and mix again until well incorporated. Add in the dry ingredients a 1/3 cup at a time. Use a spatula to scoop the batter from the bottom of the mixing bowl and fold to mix. This will ensure that the batter from the sides and bottom of the bowl is mixed in. Once the batter is ready, transfer it to the loaf pan(s) and bake for 55 to 60 minutes.
Some ovens are hotter than others so check the banana bread at 50 minutes in, and keep monitoring it from there. Use a kebab stick to test for doneness by inserting it in the center of the banana bread. If it comes up wet with batter, then the Banana Bread needs a little longer to bake. If the stick comes out clean, then the Banana bread can be removed from the oven. Remove the banana bread from the oven and allow the loaf or loaves to cool before serving.

Tips and Tricks to Achieve The Perfect Banana Bread Every Time
- Follow the recipe as it is written with no alterations.
- Measure ingredients well (It is crucial to measure all ingredients accurately.) This applies to both dry and wet ingredients. I may use a scale (the most accurate method), or fluff the flour and use a spoon to scoop it into the measuring cup, then level it with a knife.
- Don’t over-bake, or you risk having a less than perfect very dry Banana Bread
- Oven placement – I have baked my banana bread on both the middle rack and the top rack. The top rack works best for me, but since every oven is different, the middle rack may be what works best for you.
Notes
– Banana Bread is best preserved when wrapped in plastic wrap and stored in an airtight container for up to 2 days, or in the fridge for a maximum of 4 days. This also helps retain moisture.
– Do not skip the step that allows the mashed banana to sit for at least five minutes before using. This adds an extra level of moisture. If the mashed bananas turn slightly brown within five minutes, there is no need to be alarmed. Ingredients
- 3 very ripe bananas mashed
- 2 cups all-purpose flour (250g)
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 cup unsalted butter melted
- 2 tbsp. canola oil or vegetable oil
- 2 eggs room temperature and beaten
- 1/4 tsp. salt
- 1/2 cup fine brown sugar packed
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1 1/2 tbsp. mixed essence
- 1/4 cup pecans chopped (optional)
- 1/4 cup raisins (optional
Instructions
Prep the ingredients as needed
- Set oven to 300°F or 150°C, then grease and dust with flour, a 9×5 baking pan or two 8×4 baking pans.In a large mixing bowl, use a fork to mash the 3 bananas.Add the cup of brown sugar and 1/4 tsp salt to the mashed bananas. Mix and set bowl aside for at least 5 minutes. Melt the butter and allow it to cool. Beat the two eggs and set aside. Sift and combine the dry ingredients (2 cups or 250g flour, 2 tsp baking powder, 1 tsp baking soda, 1/4 tsp cinnamon, and 1/4 tsp nutmeg), then set aside.
Mix the ingredients
- Grab the mixing bowl with the mashed banana mixture, and add in the mixed essence, the oil, and melted butter. Use a wooden spoon or spatula to mix.Add the beaten eggs and mix well.Add in the flour a 1/3 at a time, and mix in a folding manner. Use the spatula to gather the batter from the sides and bottom of the bowl. This will ensure that there are no clumps and everything is mixed well. Once combined, add in 1/4 cup of raisins and 1/4 cup of pecans at this time, if being used. Add more if you prefer.
Bake it
- Pour the batter in the prepared 9-inch loaf pan or divide between two 8-inch loaf pans and bake for 50 minutes to an hour. Sometimes my Banana Bread may need an extra 5 to 10 minutes and I always use a skewer to test for doneness.Once done, remove the Banana Bread from the oven and allow loaf or loaves to cool for at least 10 minutes, before transferring it to a cooling rack. Banana bread can remain at room temperature for up to 2 days on the countertop, wrapped well in plastic wrap and covered in an airtight container.It is best preserved by wrapping it in plastic wrap and keeping it refrigerated, then bringing it to room temperature before enjoying.
