If you learn how to make delicious Pumpkin Fritters (Caribbean-style), breakfast on busy mornings will be a breeze. When made in advance, they are the perfect grab-and-go breakfast bites for when you are in a rush!

PUMPKIN FRITTERS (A BREAKFAST RECIPE FOR A BUSY MOM)
I am a mom of two little ones and mornings for the family, between preparing the kids for school and preparing breakfast and lunch for the day can be quite hectic. When my husband and I got married 16 years ago, we followed a meal schedule, and it worked out very well. With years passing by and life getting in the way, we lost interest in sticking to that schedule.
Because we have kids, we had to revert to the old way of doing certain things. This means scheduling and prepping meals for most days. Some foods like Pumpkin Fritters, because they are easy to prepare and everyone loves them, are a no-brainer for our list. We prepare them in advance and store them in the freezer, for the days when we are rushing and just need to grab and go. A few minutes in the toaster oven is all we need and breakfast is served.
ANYONE CAN LEARN HOW TO MAKE DELICIOUS PUMPKIN FRITTERS
If you’re new to the kitchen, my Caribbean-Style, Pumpkin Fritters may sound like an intimidating recipe to try, but I promise you, that is far from the truth. After you have attempted them, you will find that there’s nothing to it at all. Aside from the pumpkin slice, which you may need to purchase freshly cut from your local market, this recipe uses ingredients that we all have in our pantry. If you cook and mash the pumpkin in advance, it takes a few minutes to gather your remaining ingredients to combine them, and then fry your pumpkin fritters.
WHAT YOU NEED TO MAKE DELICIOUS PUMPKIN FRITTERS

Wet Ingredients
Mashed Pumpkin – I precook the pumpkin in water with some salt before mashing. The richer your pumpkin the tastier your fritter will be. I use mashed pumpkin for this recipe because I like the bits it leaves in the batter. I usually get about a cup of mashed pumpkin from one piece so the other half, I keep stored in the freezer until I am ready for more Caribbean-Style, Pumpkin Fritters.
Egg – The egg adds moisture, enhances the flavor and helps to bind the ingredients together
Warm Water – You need warm, not hot water for the desired texture and consistency and for activating the baking powder. If you are preparing the fritters right after cooking the pumpkin, the boiling water can be used. Just ensure it cools before using.
Flavoring – I use mixed essence and almond essence; mix essence is a combination of extracts like vanilla, almond, lemon and other extracts sold locally in a bottle. I enjoy the aroma and flavor that mixed essence adds to sweet dishes. Using one type of extract like Vanilla is fine. When I am out of mixed essence I use vanilla.
Dry Ingredients
Flour – The flour binds the ingredients, thickens the batter, and contributes to the texture. The proteins in flour form gluten when mixed with liquid, which traps air and gives structure to the batter.
Baking Powder – A leavening agent is essential in this recipe to help the batter to rise. As the fritter heats, air bubbles form, creating a light, airy texture.
Spices – Cinnamon powder and ground nutmeg are my favorite spices for elevating taste.
Salt – The recipe needs salt for flavoring and to help balance the sweetness
Sugar – During boiling, the pumpkin slices lose some natural sugars, and it is important to add back a level of sweetness.

SUBSTITUTES FOR MAKING DELICIOUS PUMPKIN FRITTERS
Mashed pumpkin: I have not yet tried this recipe with pumpkin puree from the can, however, if you do, the batter will be runnier and you will need to adjust the other ingredients to maintain the taste and texture we are aiming for with this recipe.
Brown Sugar: In most of my recipes I prefer to use brown sugar as opposed to white (granulated) sugar. It not only adds flavor, but a touch of color. If you only have granulated sugar on hand, you can use it.
Flour: regular unbleached All Purpose Flour is what I have used from day one for this recipe. I have tried it with Bob’s Red Mill Gluten Free Flour and it was just as delicious.
Egg: If you wish to make this all vegan and leave out the egg, substitute the egg with one tablespoon of flax seed meal or egg-replacer and three tablespoons of water (allow to sit for about 5 minutes before using in place of egg). While the results are not exactly the same as with the egg, you will hardly tell the difference.
NOTES
Serve my Caribbean-Style, Pumpkin Fritters immediately after preparing as they are best enjoyed when warm. When storing in the freezer, allow the fritters to cool completely, then place each fritter between a piece of parchment paper (this will keep them from sticking together), before transferring them to an air-tight container.

Caribbean-Style Pumpkin Fritters
Ingredients
- 1 cup warm water (not hot)
- 1 tsp vanilla essence
- 1 large egg (beaten)
- 1/2 cup mashed pumpkin (packed to 60g)
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp seasalt
- 4 tbsps brown sugar
- 1 dash cinnamon powder
- 1 dash ground nutmeg
- oil for frying
Instructions
In a medium-sized mixing bowl or large measuring cup, combine the wet ingredients.
- ½ cup (120g) mashed pumpkin
- 1 cup + 2tbsp warm water
- 1 tsp mixed essence
- ½ tsp almond extract
- 1 beaten egg
Add in the dry ingredients and whisk well.
- 1 ¾ cup (220g) all-purpose flour
- 2 tsp baking powder
- ¾ tsp fine sea salt
- ¼ tsp cinnamon powder
- ⅛ tsp ground nutmeg
- 6 tbsp coarse brown sugar
- Oil for frying
