Caribbean-Style Pumpkin Fritters

Ingredients

  • 1 cup warm water (not hot)
  • 1 tsp vanilla essence
  • 1 large egg (beaten)
  • 1/2 cup mashed pumpkin (packed to 60g)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp seasalt
  • 4 tbsps brown sugar
  • 1 dash cinnamon powder
  • 1 dash ground nutmeg
  • oil for frying

Instructions

In a medium-sized mixing bowl or large measuring cup, combine the wet ingredients.

  • ½ cup (120g) mashed pumpkin
  • 1 cup + 2tbsp warm water
  • 1 tsp mixed essence
  • ½ tsp almond extract
  • 1 beaten egg

Add in the dry ingredients and whisk well.

  • 1 ¾ cup (220g) all-purpose flour
  • 2 tsp baking powder
  • ¾ tsp fine sea salt
  • ¼ tsp cinnamon powder
  • ⅛ tsp ground nutmeg
  • 6 tbsp coarse brown sugar
  • Oil for frying

Once the batter is mixed well, it is time to fry

    Coat a frying pan with oil, and on medium to low heat, pour in a quarter cup of batter at a time. I may use a 10" pan to fry three (3) fritters at a time or a 5" pan for frying one at a time. Allow the fritter(s) to fry on one side, then flip to cook on the other side. You can tell when they are done frying by their golden brown sides. Once each fritter is done, place the fritter on a platter lined with paper towel to soak up any excess oil.

      Repeat the process until there’s no batter left. Turn off the stove and serve the Fritters warm.
